Get ready to enjoy a taste of the sea with these Lobster and Prawn Boats, recipe courtesy of Marisa Packer of Kangaroo Island Oysters, a delicious recipe we had the pleasure of sampling during our Kangaroo Island and Victor Harbor Trailer Trip.
This dish combines fresh seafood with simple, flavourful ingredients for a meal that's both satisfying and easy to prepare. Perfect for lunch or dinner, these boats are finished with cracked pepper and a squeeze of lemon for that extra zing.
Ingredients
LOBSTER PRAWN BOATS
- 250g cooked lobster meat
- 4-6 cooked prawns, peeled
- 2 panini breads, or 4 thick slices crusty white bread
- Handful finely shredded iceberg lettuce
- Butter
- Garlic salt
- Cracked pepper
- 2 lemon wedges
SEAFOOD SAUCE
- 1/2 cup whole egg mayonnaise
- Worcestershire sauce
- Tomato sauce
- Tobasco
Method
SEAFOOD SAUCE
- Combine mayonnaise with a dash of Worcestershire sauce, 1 tbsp tomato sauce and a splash of Tabasco. Stir well.
LOBSTER PRAWN BOATS
- Lightly butter the bread and sprinkle with garlic salt.
- Toast under the grill until just golden.
- Add a layer of finely shredded iceberg lettuce.
- Top with fresh cooked lobster and prawns.
- Finish with seafood sauce, season with cracked pepper and serve with a lemon wedge on the side.
