Pancakes with apple & banana topping recipe

Who can resist fresh pancakes for brekky? Especially these, with their juicy fruit topping and a creamy dollop of coconut yoghurt.

You could make the batter from scratch, but I find it’s easier to use store-bought pancake mix when we’re on the boat. Use your barbecue’s flat hotplate to cook them – you can fit more on there than in a frypan and if your family is anything like mine, everyone’s happy if you just keep those pancakes coming.

Pancake mix, store-bought

4 apples, stewed

3 bananas, mashed

3 tsp cinnamon

½ to 1 cup maple syrup

Fresh berries

Coconut or vanilla yoghurt

  1. Peel, core and slice the apples. Cook in a saucepan with a splash of water until tender. Shortcut: substitute with 2 small tins of stewed apples.
  2. Stir in the mashed bananas, cinnamon and maple syrup  – add more (or less) cinnamon and syrup, to taste.
  3. Either make your favourite type of pancake batter or used store-bought pancake mix. Lightly oil the barbecue’s flat plate, heat to medium temperature. Cook enough pancakes to make a stack for each person.
  4. Top the pancake stacks with some apple banana topping, add coconut or vanilla yoghurt and lots of fresh berries.
